Heat the vegetable oil in a frying pan until 130 °c.
Peal the potatoes and cut them into evenly sized chips. Rince the chips with water and dry with a kitchen towel.
Deep fry the potatoes in de oil for 6 to 10 minutes until they are soft, the chips should not colour yet.
Remove the chips from the oil with a frying scoop and drain of exces oil. Place the chips on a flat tray with baking paper and leave them in a freezer for 10 minutes.
Heat the vegetable oil in a frying pan until 180 °c.
Deep fry the chips a second time for 2 to 4 minutes until the chips are golden and crispy.
Remove from the oil and let the exces oil drain of. Finaly ad salt to taste your chips are ready to serve.
Serve with mayonaise or ketchup.
