Crush / peel / chop the garlic; peel the shallot and dice in to 0.5 cm cubes

For the spinach, if the stems seem large and tough remove them otherwise you can leave them on. If the spinach is not already washed, wash and drain the spinach until the sand is removed.

Heat the oil in a large sauce pan on medium heat and add the garlic and shallots. Stir-fry for 2-3 minutes then add the spinach

Keep stir- frying for a further 2-3 minutes until the spinach has reduced in size but still has a bite. Add some freshly squeezed lemon juice and salt and freshly ground pepper to taste.

Tips

To enhance the spinach you can add toasted pine nuts
