Place the strawberries in a saucepan with a little water and the sugar on medium heat

Meanwhile place the starch in a cup and add about the same amount of water. Stir until the starch is fully dissolved.

Allow the mixture to simmer just below boiling point for about 20 minutes, until you have a smooth texture.

When the fruit has been reduced to a smooth texture, add the dissolved starch to the pan using the whisk to stir gently; boil shortly for 1-2 minutes until the liquid in the pan is bound.

When the jam has reached the correct consistency, push the jam through a sieve with the spatula and allow to cool

Tips

You can replace the strawberries with other fruit to make your favourite jam

Serve with pancakes or bread

If the mixture becomes to dry before binding, you can thin it by adding a little water.
