Peel the mango and cut it from the pip. Cut into 1/2 cm cubes

Peel / crush / chop the garlic and chop the onion into 1/2 cm cubes

Heat the oil in the sauce pan and gently simmer the garlic with the onions and the clove for 1 to 2 minutes

De seed the chili and finely chop it. Peel and grate the ginger and add the chili and ginger to the sauce pan, simmer for a further 2 minutes

Add the white wine vinegar, the sugar and the lime juice and gently bring to a boil

Add the mango cubes and water, simmer for 20 to 30 minutes

Use a whisk to mash the mango, keep it chunky and allow to cool down
