Wash and the grate the cucumber
Put a hand full of the grated cucumber in a tea towel, make a ball and squeeze most of the moisture out, add to the mixing bowl with the Greek yoghurt and repeat until all the cucumber has been squeezed and mixed through.
Crush, peel and finely chop the garlic and also mix through the Tzatziki.
Add the salt to taste and mix wel
Add some extra virgin olive oil to give it an edge
Add some lime or lemon juice for a refreshing taste
