You can prepare the sweet pastry in advance.
Heat your oven ( 220°C / 428°F) and grease and flour the baking tin.
Roll out your sweet pastry on floured surface to about 0.5cm thick and roughly in the shape of your baking tin. Fold into the tin and make sure it fits into the corners. Allow to rest in the fridge for 15 minutes.
Apple filling: Peel the apples and cut them into 2 cm cubes, drizzle a little lemon juice over them and add the cinnamon, nutmeg, sugar and melted butter.
Add the apple filling to the baking tin and spread evenly. Use the remaining sweet pastry to role out a circle the size of the baking tin about 0,5 cm thick. Place over the baking tin.
Brush a little egg yolk on the pie lid and bake in the oven for 10 minutes.
Turn the oven down to 180°C / 356°F and bake for a further 30 40 minutes until golden brown and cooked.
You can serve the apple pie hot or cold, enjoy…..
Serve with a little whipped cream or some vanilla ice cream.
