Cut the cold butter into cubes and place them into a mixing bowl.
Add the sugar, salt and the flour to the mixing bowl, mix together using your finger tips until the mixture looks like crumbled cookies.
Add the egg and the milk and mix it through until you can just make a ball. Do not overwork the pastry!
Keep the pastry as a flattened ball in cling film for at least 30 minutes before you use it.
