Heat the oven ( 220°C / 428°F)

Place the sweet potatoes on the oven tray and drizzle with a little oil and roast for 20 -25 minutes until cooked.

Allow to cool down a little so that you can handle them and peel the sweet potatoes, the skin should come off easily.

Add the butter and blend until smooth. Season with pepper and salt to taste!
