Prepare the taco rub.

(I like to make my rubs in advance and keep them in air tight jars for later use)

Prepare the rice and the easy tomato salsa.

Heat the oven to 160°C / 320°F.

Finely chop the onion and crush, peal and chop the garlic.

Place the frying pan on medium to high heat with a little olive oil and stir fry the beef mince with the onions, garlic and the taco rub.

Grate the ginger into the frying pan and stir fry on medium heat for 15 -20 minutes, season with salt and pepper.

For the garnish: grate the cheese, slice the lettuce and jalapeno peppers.

Serve in small bowls with the crème fraiche, sweet corn, picked coriander leaves and the easy salsa .

Place the taco`s on a flat tray and bake for 3-5 minutes.
