Crush / peal / chop the garlic and cut the onion into 1/2 rings. Place the stock pot on medium heat and melt the butter. Gently stir fry the onion with the garlic for 4 - 5 minutes until nicely brown. Add the pepper and sugar.
Deglaze the stock pot with the white wine and bring to a boil, add the beef stock and allow to gently simmer for 30 - 45 minutes. Add the cognac and remove from the heat, season with salt to taste
Turn on your grill medium to high heat.
Cut out the soup bowl shape from the slices of bread, one for each soup bowl. Spread a nice thick layer of cream cheese evenly over the slices of bread.
Fill the soup bowls with the onion soup and place them on a tray. Place the slices on the soup bowls and grate the cottage cheese over the top.
Gratine under the grill for 3 - 5 minutes until golden brown.
Carefull when serving..... the bowls are hot.....
