Crush / peal the garlic and pick the herb leaves.

Place the garlic and the fresh herbs in the mortar with a little oil and the lemon zest.

Pound the herbs into a paste and add the rest of the oil.

Season with salt and pepper.

Tips

1

Use a hand blender instead of a pestle & mortar in case you want to make more then 200 ml of herb oil.
