Heat a skillet on medium heat and pan-fry the bacon 2 - 3 minutes on each side untill crispy and coloured. Set the bacon aside and allow to cool down.
Using the same skillet with the bacon juice/fat toast the slices of bread on one side untill nicely golden brown.
Wash the lettuce and the tomato, pick the lettuce into chunks and slice the tomato.
For each sandwich:
Place two slices of bread on the work surface (toasted side down) and cover the untoatsted sides with mayonaise.
next, place some lettuce leaves and four slices of tomato on each side.
Season with pepper and place three slices of crispy bacon on on side of the sandwich.
Close the sandwich and slice the sandwich diagonaly for easy eating.
Repeat the process for the remaining slices of bread..
