Boil the water and pour over the couscous with the salt in a mixing bowl and set aside.
Roast the almonds for 2-4 minutes in a skillet until evently browned, allow to cool down.
Chop the a soaked apricots and also add to the stil warm couscous and stir through. Allow to cool down
Now peel the orange and slice into cubes. Chop the spring onion, coriander leaves and almonds and mix through the couscouus salad.
Finaly crumble the feta over the salad and season with lime juice and freshly ground pepper.
Grate the orange and add the zest to the warm couscous.
