Mix the mustard with the wine vinegar and the white caster sugar.
Whisk through the extra virgin olive oil in a small dripping stream, making sure the oil properly bonds whith the vinegar.
Finally add salt and pepper to taste
For a tasty variation add crushed / chopped garlic
