Peal the shallot and chop into rings

Place the shallots on medium to high heat with the white wine and bring to a boil.

Reduce the heat and bring the wine to a simmer. Reduce the wine to less then 1 /3

Add the cream and bring to a boil, Add salt and pepper to taste

Pass through the sieve to make a smooth sauce
