Clean the beetroot and the potatoe and cut into small cubes. Boil both seperately until just cooked and allow to cool down.
Chop the gherkins, onion and appel into equal fine cubes about the same size as the potatoe.
Mix the ingredients and through the potatoes and beetroot. Add the corn and the mayonaise and season with pepper and salt.
